CONDITIONING INFO
Terroir Espirito Santo is not only the name of an appellation, it’s also the name of one of the smallest Brazilian states, bordering those of Bahia (north), Minas Gerais (west) and Rio de Janeiro (south). It is a rapidly developing state, and one of Brazil’s most beautiful, characterised by a mosaic of landscapes from steep mountains to Atlantic coastal regions. Rich in native forests, abounding with fauna and flora, Espirito Santo has made it compulsory for all producers both large and small to conserve at least 20% of their property in the forest. Although a traditional producer of Robusta, in low altitude areas (600-700 m), the quality and diversity of the state’s Arabicas, produced in mountainous areas at an altitude of more than 1,000 metres, have surprised us in recent years.
Introduced by Italian and German migrants from 1850, Arabica prevailed until 1962, at which time the coffee fields covered some 500,000 hectares. Poor soil management and treatments used to tackle rust had practically decimated its production, but Arabica has been making a strong comeback in recent years, with some unique and surprising sensory profiles.
The coffees are harvested by hand, because of the nature of the mountainous terroir. Due to uneven maturation levels, the farms have no choice but to harvest between June and December, depending on the area and on cherry maturity. Semi-washed coffee is common in the region. This coffee is named IPE in reference to the Brazilian Handroanthus tree, more commonly called (ipê) in Latin America. It is a tree that can bear flowers of five different colours, and so we have chosen to call this fully-washed coffee WHITE IPE.
